Primal Apple Muffins

Primal Apple Muffins

2 1/4 cups almond meal
4 eggs
1 apple, finely chopped
1 very ripe banana
1/4 cup coconut oil
1/3 cup water
1/2 tsp baking soda
1 heaping tbsp cinnamon

Preheat oven to 350°.

Peel the banana and using a fork, mash the banana in the bottom of a large mixing bowl. Using a hand held chopper if you have one, finely chop the apple, and add to the bowl. Add all other ingredients and mix by hand. The batter will not be super thick, but more like a cake batter. Using a bit more coconut oil, grease a muffin tin. Fill the tins about 3/4 of the way full. Bake for 15-17 minutes. You will know they are done when you can insert a toothpick into the middle of a muffin and it comes out clean.

Makes approximately 16 muffins.

Day 7

Meal #1 12pm

Comments:
I added some salt and basil and a little extra water to cut out the pepper. It feels so good on my throat.

Snack #1 1:15pm
Banana with almond butter



Comments:
I've been hungry since I finished the soup, but I didn't want to push it. I was craving some almond butter and my legs still really hurt, so I thought the extra potassium from the banana would be helpful. I'm still too stubborn to take any Advil.

Meal #2 2pm
2 hard boiled eggs with mayo, pepper and chili powder on bed of lettuce
1/2 red pepper



Comments:
Even after that banana, I was still legitimately hungry. I decided I should just make myself an actual meal instead of snacking more. I guess I have my appetite back now. I'm starting to feel a little better too.


Meal #3 6pm
Two pork chops seasoned with pepper, basil and garlic powder
steamed broccoli and carrots



Comments:
These pork chops were so good.

Snack #2 7pm
20 almonds



Comments:
I just finished the almonds and I'm still hungry. I'm going to wait it out though and drink some more hot water with lemon and honey.

Meal #4 9pm

Comments:
I thought it would be a good idea to get in another bowl of soup. What I really wanted was a pastrami sandwich. Maybe some corned beef on rye. An actual deli sandwich that's so big you can barely get your mouth around it to take a bite. I settled for soup. The crackers are my son's and to the best of knowledge don't have anything in them I'm trying to avoid. I just wanted something crunchy.

I'm drinking regular water with this meal. The first I've had all day. It finally tastes good again and isn't obnoxious to swallow. I'm hoping to go to sleep by 11 and be fully recovered by tomorrow. It'll be unprecedented.

I just read a post by an allergy blogger. I am the first to admit I haven't always eaten this healthy. I'm also the first to admit that it's doubtful anyone ever looks at me and thinks I eat this healthy. I understand there are misconceptions all over the place. I'm frustrated tonight though because the blog post touts Boar's Head deli meat for being gluten-free and mostly allergen-free, which is great, except it's still deli meat and still processed and full of sodium and so bad for you!

Yes, I realize I'm saying this right after admitting a profound desire for pastrami. I didn't say it doesn't taste good, just that it's not good for you.

Day 5

9:30am
6oz glass of orange juice

Meal #1 10:15am
2 pasture-raised eggs
sauteed red peppers, zucchini, carrots, mushrooms



Comments:
This is the end of my pasture-raised eggs. I haven't decided yet what I'm going to do. I need to call a nearby farm and ask how much theirs are, otherwise I need to reevaluate the importance of eggs.

Snack #1 12:45pm
smoothie
only 1 tbsp almond butter
10 almonds



Comments:
So I finally measured the amount of coconut milk kefir I use in my smoothie. It's so much less than I would have thought. I measured out a half cup of kefir and it's more than I normally use. So it's probably only about 3 ounces. Also, I ran out of almond butter. This needs to be remedied immediately.

Meal #2 3:45pm
can of tuna with avocado and pepper slices



Comments:
I'm actually really hungry. So hungry, in fact, that I'm already thinking about how I'm still going to be hungry after I finish eating this.

I gave myself some time to digest after I finished eating, but I was still hungry. I feel better now that I ate some more.

Random fact: I've been weighing myself every day for five months. It's gotten to the point now that, despite the fact that my weight fluctuates 2-6 pounds, I can still tell you the exact weight I'll be without fail when I step on that scale. I think eventually it'll be the same way with food. I'll be so in tune with my nutritional needs that I'll be able to prepare food accordingly.

That second glass of orange juice today is having the same affect on me as the extra strawberries and apples. I'm going to have to completely limit my fruit intake to smoothies for a week and see if that helps. Now I'm on a quest for other sources of Vitamin C.

Meal #3 6:45pm
4 oz sirloin
1/2 zucchini shredded with organic spaghetti sauce



Comments:
The picture shows about 6 ounces of meat, but I split it up and gave some to the kids who insisted they had to have some. The sirloin was freaking amazing by the way.

When I realized I couldn't put Parmesan cheese on my zucchini, I was really bummed, but figured I'd give it a try without. I always forget how good this spaghetti sauce is. I didn't need the cheese to mask it at all. Dinner tasted so good and was exactly what I needed to change things up.

It took a good couple hours to recover from the orange juice. I still don't feel great, but I do feel much better. I've found that these things take about four hours and then I'm good again.

Normally I would have eaten some crackers or bread to counteract the feeling from the orange juice. Sometimes I would have just munched on any old carbs. Today I contemplated eating some chips, but then I remembered yesterday and knew they would have their own reaction. Then I thought maybe I would have some of my son's gluten-free crackers, but that just seemed like cheating. Covering one reaction to food with another food wasn't going to negate the problem at hand, so I didn't have anything. It worked out well and I proved to myself once again that I have just as much willpower as I'm willing to permit.

Alright, I've had a bowl of cereal. It was completely unsatisfying, but now my desire for cereal is out of my system. On to bigger and better things.

Comments:
I had to eat some real food after the cereal.
