Day 12

Meal #1 10:45am
2 eggs
sauteed vegetables



Comments:
I didn't officially get up until 9:30, I think, so I still kind of ate early.

Meal #2 1:30pm
tuna with mayo
avocado and pepper slices
tomato slices with fresh mozzarella and basil



Comments:
I started getting hungry an hour ago. I made the kids more pancakes first though. I didn't have any pancakes today. I did have a lick of the whipped cream though because I tweaked it today and wanted to see how it turned out.

Snack #1 3:30pm
Greek yogurt with fresh ground cinnamon
sliced peaches
20 almonds and macadamia nuts





Comments:
I wasn't intending on the nuts, but I was still hungry. That peach was amazing.


Meal #3 6:15pm
bacon
zucchini
curried hash cakes



Comments:
I've never made bacon before. In the microwave, sure, but that's as far as it's gone. First, I should mention it took forever to find bacon at the store that wasn't cured with sugar. I'm sure I should have gotten super no antibiotic no hormone, specially fed bacon, but I don't have that kind of time or money at this point. So instead I spent all my time looking for no sugar bacon.

The skillet was still on the stove from the pancakes this morning, so I decided to fry up some bacon. I was super skeptical. I'm not a big fan of fat on meat, especially bacon. I started frying it up. I was surprised how perfect it turned out. I am an awesome bacon maker. Seriously. This is the best bacon I have ever eaten.

I used the leftover bacon fat to cook up some zucchini slices which I had seasoned with basil and garlic powder. After they were cooked through, I put them under the broiler to crisp them up some.

Then I took the leftover curried hash and formed it into patties and crisped those up too. They appear more patty-like than they actually were, as they were still crumbly, but they were really good. In a week or two, I'm going to cook up another batch of curried hash.

The only thing that could have made this dinner better was more bacon. Mmmm...bacon.

So the bacon platter was good, but it was so heavy. I'm not used to eating greasy things like that. I'll probably limit bacon consumption to lighter meals from now on. Mmmm...bacon.

Meal #4 8:45pm
London broil
1/2 red pepper
tomato slices with fresh mozzarella



Comments:
After the last meal, all I've wanted is a crispy red pepper. No time though. Now that the kids are asleep, I finally got a chance to make myself a light little plate o' stuff. There is less meat here than is ideal, but it's all I have and I didn't feel like cooking up more.

Snack #2 9:15pm
banana and almond butter sandwiches



Comments:
I was pretty satisfied with my last meal...until I spent a half hour talking about food I couldn't have. Then I just wanted to eat. So instead of eating Cheez-its and animal crackers and ice cream and waffles...I had a banana with almond butter. If I ever manage to digest, I'm going to go work out.

I didn't have a smoothie today. I consciously decided against it. I figured I'd have some real fruit in fruit form instead.

I should really know better than to work out so late and expect to not have to eat again.
