Day 9

Meal #1 9:15am
two scrambled eggs
sauteed peppers, carrots and cucumbers



Comments:
The cucumbers made everything surprisingly watery. I've had them before and they usually make it better, not worse. Oh well. The eggs were still really good despite not being pastured.

I'm still feeling better as time wears on. I'll get back to 100% eventually!

Snack #1 11:15am
smoothie
20 almonds (cashews and pecans)





Comments:
I need to go shopping. I want some new seasoning for cooking and also I have to buy some baking ingredients. I'm going to make some sort of "to go" treat today for my daughter's bus drivers because I want to start doing random nice gestures like this for the people who are important in my life. Yes, that even includes the bus drivers. Maybe I'll even send you something!

The nut mix was added later at 11:30. I was still hungry. And freezing from my smoothie. I really have to be smarter about drinking frozen things when it's already so cold.

Meal #2 3:15pm
can of tuna with mayo
avocado and red pepper slices



Comments:
Going out always messes with my eating schedule. I didn't even realize it was past food time until my daughter starting eating chips and I thought to myself "well, I could have just one..." and then I realized I could just actually eat a meal instead.

Ginger Shrimp Salad*
Curried Hash*



Comments:
I found these recipes on Everyday Paleo the other day and tonight I wanted to make something new. I expected to really like the shrimp and be "eh" about the curried hash, but I was so very mistaken! The shrimp dish wasn't bad. It just didn't wow me. Also the shrimp themselves weren't that great, so that may have played a big role.

The hash though! Oh my god, the hash! Freaking phenomenal! It was like Thanksgiving. In fact, this will be a staple at every Thanksgiving from now on. It's strangely similar to stuffing.

I am not a potato girl. Sure, they taste fine, but they're very...heavy. I prefer light and crispy vegetables like peppers (if you haven't noticed). I like vegetables you can still eat raw. There is nothing wrong with potatoes and I'll eat them if they're prepared for me, but I never think to actually make them. In anything. Ever. I'll randomly buy them at the store—regular potatoes and sweet potatoes, but then they sit on my shelf until they go bad. The sweet potatoes I used tonight I bought last week. They would have gone unused I'm sure had I not made this tonight.

I'm so glad I made this dish though because the sweet potato with the zucchini covered in that "hot, but not hot" curry powder was out of this world! It's a must try.

Snack #2 8:15pm
Greek yogurt with a sliced apple and honey



Comments:
After the curry dinner, something sweet actually did sound good, so I added some honey.

I didn't have any noticeable reaction to the dairy last night. This morning I felt a little bloated, but after breakfast, it wasn't anything I noticed again.

Today my jeans are ridiculously baggy on me. So baggy that if I don't buy a belt within a couple days, these pants won't be something I can wear out of the house. Speaking of buying things, I finally bought new sneakers today!

I had a good day today. I'm going to workout tonight and get some rest and hopefully be 100% by morning.

I know. I know. It's so late.

I made muffins. At 1am. I killed my workout tonight and after recovering I realized I still needed to make muffins. So I did. And then I decided I should eat one. And then I decided that if I was going to eat a muffin, I should eat something substantial too. This may have been a mistake since I am super full now.

The muffins are really good though! I don't know how someone who doesn't eat this way will like them, as they're not very sweet, but I like them. I may decide to keep these for the family and make a batch of something "less Paleo" over the weekend to give to the bus drivers on Monday. We'll see how I feel after a couple hours of sleep.
