Day 19

Meal #1 10:45am
two eggs
peppers, carrots, zucchini, mushrooms
three pieces of bacon



Comments:
I didn't go to sleep until after 4:30am. I just wasn't tired and I enjoyed being productive while I had the time.

Snack #1 1:30pm
smoothie
20 assorted nuts



Comments:
I made a double smoothie today because there were two of us. For future reference, this is just a bad idea. Always make two smoothies instead.

Something random to note. My kids both enjoy eating coconut oil on a spoon. Most vegetables? No way. Fat on a spoon? Bring it on! Baby steps.


Meal #2 5:30pm
hamburger with avocado
sauteed peppers, zucchini and mushrooms
watermelon at 6pm





Meal #3 9:45pm
leftover veggies from dinner with shrimp and turmeric



Comments:
I kept having to add more turmeric. It never tasted flavored enough. Otherwise the meal was great.


Snack #2 11:15pm
banana and almond butter sandwiches with fresh blueberries
blueberry coconut muffins*





Comments:
The sandwiches are always so rich. I've really enjoyed pairing them with more tarty fruits to break up the sweetness.

The muffins are a new recipe I found tonight. I got a tattoo this weekend and I told the guys working there that I'd bring them muffins on Monday. So here it is Sunday night and I hadn't even looked at any recipes. I know there are Paleo recipes, but I didn't know if I wanted to go that route. If I made regular muffins, I don't know that I even have the ingredients to make them. Not to mention, I can't even try them to make sure they're good. So I made these Paleo muffins.

They are...not bad. I don't have agave nectar, so I substituted it with honey. Apparently not enough honey though, as they are lacking sweetness, even for me. They are also dry...yet moist at the same time. It's an interesting texture. The texture probably wouldn't even be an issue at all if they were sweeter. Next time I'll take them out of the oven a little earlier. I think I'll also make sure to use fresh blueberries.

Even though it wasn't great, I still want another one. Such is what happens with baked goods.

So I had another muffin. This one was surprisingly different from the first (different muffin cup). I'll have to play around with the recipe.

I'm having the pepper and avocado because I needed something I'm used to to stave off the involuntarily reaction to wanting more bad carbs because of the muffins.
